DM-90(Double modified lecithin by acylation and hydroxilation)
HLB value of these lecithins are about 8-12. They are easily
dispersible in water. As a emulsifer, it forms a micro-structure called Oil in Water(O/W).
In food industry, they are Suitable
for beverages, noodle, and the products that require water good maintenance and so on.
Hydophilic lecithins are enzyme-decomposed or chemically modified by hydroxilation.
Including: GMO-types and Non-GMO type; Soya lecithin and sunflower lecithin; liquid and powder.
